I always used cooking oil instead of ghee in deep fryer for making potato chips in French fries way. A few weeks back, the fryer was left powered on by my brother mistakenly for the whole night and thus all the cooking oil burned out and was not of any use now. This time i though why not try ghee, it might cost me less. But this experience was not good, firstly its difficult to get ghee out of its tin box, either you heat the tin to melt ghee or get solid ghee out by any sharp thing. Secondly, it freezes inside the fryer so it takes much more time as first the fryer melts ghee and then you can insert chips in it. It also disturbs the thermostat settings of your fryer because its not designed to first melt the ghee. The bottom line is, don’t use ghee in deep fryers because it would cost you more in every way.
